Lychee-Coconut Shake

Lychees are the best thing to have with coconut, simply because they go so well. This shake has been known to cure the depression-laden blues and the tangy hints of lychees blend perfectly with the smooth and delicious coconuts. The most important thing that you should follow is have fresh lychees for this dish.

In fact, although this dish can be made with frozen or canned lychees, fresh is always called for. With high levels of Vitamin C, lychees are an absolute favorite of dieters who want to shed pounds without thinking too much about the composition of their daily shake.

A sneaky handful of spinach into the mixture gives it a lovely color, and more importantly, adds a healthy boost of Vitamin A, Vitamin C, and a lovely hit of minerals like Manganese. The good news is, as this recipe is really tasty, no one will really be able to guess the vegetables that have been sneaked into the rich shake. You can ignore the honey or reduce it if you do not want added sugar to your shake, or the lychees are very sweet.


  • 1 cup fresh lychees, peeled and pitted
  • 1 cup coconut milk
  • ½ cup fresh spinach
  • 1 tablespoon honey
  • 1 cup crushed ice


At first, put the coconut milk in with the spinach in a blender and blend thoroughly for 30 seconds. Combine the lychees with the spinach-coconut milk mixture and this time pulse till you see the mixture smooth as per your liking. Add the crushed ice and pulse again for a few seconds until the consistency is right. Pour the concoction into tall glasses, and serve immediately. This drink tastes best when served and consumed immediately after making, and might separate into layers if you leave it for a while.
